Pouteria Lucuma is undoubtly the most popular fruit in Peru referred to as the Gold of Incas by the Peruvians, who have been enjoying this fruit as a food source from time immemorial and have used it as a traditional remedy for centuries.

Pouteria Lucuma is an evergreen tree that grows up to 20 m tall native to  the Andes of Peru and other South American countries. Pouteria Lucuma is a species of tree in the family Sapotaceae. It grows naturally at elevations of 2,700–3,000 m (8,900–9,800 ft). The fruits are 6–12 cm long and is bright yellow, fibrous and creamy. It take four kilograms of fresh fruit are needed for every kilogram of Lucuma powder.

The image of Lucuma can be seen on countless ceramics found at pre-Colombian ruins and indigenous burial sites of coastal Peru. The tree can bear as much as 500 fruits each season. Usually, when other kinds of crops fail, people used to depend on Lucuma for their food. As such, the Lucuma tree also has the name ‘Tree of Life’.

Blend in a food processor

1/2cup Lucuma powder
1cup cashews (soaked for 2 hours then drained)

2cm vanilla bean or 1 Tbsp vanilla extract/powder

1/4cup coconut nectar

A pinch of organic sea salt and 1cup water.

Freeze, then remove for a tantalising taste of Peru.

 

Lucuma pancakes Serves 6 small pancakes

1/4 cup buckwheat flour

1/4 cup brown rice flour

1 tbsp chia seeds

1/2 banana

1 tsp baking powder

3-4 tsp Lucuma powder

1/2 cup oat milk/almond milk

Just make regular pancakes from the mixture and enjoy the delicacy.
